This August, our chefs at 270 Park are featuring something you truly can't buy yet. Through our partnership with Row 7 Seed Company, we have exclusive early access to a new sweet corn variety that's still in its trial phase - nearly a decade in the making by Chef Dan Barber and the Row 7 team. Developed for exceptional flavor and creamy texture (not just sweetness), it delivers a rich, true corn character you'll taste in seasonal dishes across the Food Hall throughout August and early September. 

This limited-time menu feature culiminates on Wednesday, September 2nd at The Carts with a special Chef's Table from Executive Chef Dana Calbo. She'll be preparing a Sweet Corn Cannelloni with scallops, guanciale, and tomatoes.

About Chef Dana Calbo

Dana leads the culinary program for the Exchange at 270 Park, where she oversees a team dedicated to seasonal cooking and thoughtfully sourced ingredients. Before joining 270 Park, Dana spent eight years as Executive Chef for Jefferies Global Investment Bank and previously led the culinary program at Proskauer Rose Law Firm. Her career also includes The Morgan Library & Museum, where she shaped the dining experience for one of New York City's premier cultural destinations. Dana has been recognized with an OpenTable Diners' Choice Award and Compass Group's prestigious 2022 Be A Star Award for her leadership and commitment to diversity, equity, and inclusion.

Ask Dana about her favorite dish to cook, and she'll tell you it's Pasta e Fagioli. It's the dish her father made, one that reminds her of family, comfort, and the person who first inspired her to become a chef. “The best dishes don't need to be complicated,” she says. “They begin with exceptional ingredients, prepared thoughtfully.”
